Blueberry Muffins Recipe

Ingredients

  1. 100 g wholemeal spelt flour
  2. 65 g of Plenny Shake Vanilla shake
  3. 1 large (over) ripe banana
  4. 2 tablespoons sweetener of choice (e.g. date/maple syrup)
  5. 1 handful of fresh or frozen blueberries
  6. 150 ml of almond milk
  7. 1 teaspoon baking powder
  8. 1 tablespoon of natural oats to decorate

Preparation

  1. Mashed banana in a bowl.
  2. Add the almond milk and mix.
  3. Add the Plenny Shake Vanilla powder, flour, syrup and baking powder.
  4. Stir until fully mixed. The batter should be quite thick.
  5. Add the berries and stir gently.
  6. Divide into a muffin tin. Makes about 9 muffins.
  7. Sprinkle oats on top and bake at 180 degrees for approx. 25 minutes.
  8. Let it cool before serving.
