Blueberry Muffins Recipe
Ingredients
- 100 g wholemeal spelt flour
- 65 g of Plenny Shake Vanilla shake
- 1 large (over) ripe banana
- 2 tablespoons sweetener of choice (e.g. date/maple syrup)
- 1 handful of fresh or frozen blueberries
- 150 ml of almond milk
- 1 teaspoon baking powder
- 1 tablespoon of natural oats to decorate
Preparation
- Mashed banana in a bowl.
- Add the almond milk and mix.
- Add the Plenny Shake Vanilla powder, flour, syrup and baking powder.
- Stir until fully mixed. The batter should be quite thick.
- Add the berries and stir gently.
- Divide into a muffin tin. Makes about 9 muffins.
- Sprinkle oats on top and bake at 180 degrees for approx. 25 minutes.
- Let it cool before serving.
